M\u00e9s enll\u00e0 de preservar els aliments, tamb\u00e9 tenen altres finalitats (<a href=\"https:\/\/turkarchpediatr.org\/en\/food-additives-13853\">Erkan, 2010<\/a>; Comissi\u00f3 Europea, 2022):<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>allargar la vida \u00fatil<\/strong> dels aliments preservant les seves qualitats: <strong>conserven, coloren i estabilitzen els aliments durant la seva producci\u00f3, envasat o emmagatzematge<\/strong><\/li><li><strong>desenvolupar propietats sensorials: <\/strong>donen o canvien l&#8217;olor o el gust dels aliments<\/li><li><strong>prevenir els riscos per a la salut<\/strong><\/li><li><strong>reduir el malbaratament alimentari<\/strong><\/li><li><strong>augmentar la diversitat aliment\u00e0ria<\/strong><\/li><\/ul>\n\n\n\n<p>Els <strong>tipus d\u2019additius alimentaris<\/strong> es poden dividir en <strong>sis grups de mol\u00e8cules<\/strong>: conservants, additius nutricionals, colorants, aromatitzants, texturitzants i agents diversos. En el seg\u00fcent <a href=\"https:\/\/food.ec.europa.eu\/safety\/food-improvement-agents_es\">enlla\u00e7 de la Comissi\u00f3 Europea per la Seguretat Aliment\u00e0ria<\/a> pots trobar m\u00e9s informaci\u00f3 i fer consultes per algun compost concret aix\u00ed com la legislaci\u00f3 vigent. Per a saber m\u00e9s en detall, et deixem les <strong>dues grans bases de dades que s\u2019utilitzen: la de la <a href=\"https:\/\/webgate.ec.europa.eu\/foods_system\/main\/?sector=FAD&amp;auth=SANCAS\">Uni\u00f3 Europea<\/a> i la de la <a href=\"https:\/\/www.fao.org\/fao-who-codexalimentarius\/codex-texts\/dbs\/gsfa\/es\/\">FAO (<em>Codex Alimentarius)<\/em><\/a>.<\/strong><\/p>\n\n\n\n<p>Per altra banda, <strong>els additius que s\u2019empren a la Uni\u00f3 Europea han d&#8217;haver estat avaluats i usats<\/strong>. Per aix\u00f2, han d&#8217;haver <strong>demostrat que s\u00f3n segurs a les quantitats utilitzades<\/strong>, que s\u00f3n <strong>necessaris en els aliments en qu\u00e8 s&#8217;autoritzen<\/strong> i que <strong>no porten a engany al consumidor<\/strong>.<\/p>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\"><strong><em>Com es pot identificar un additiu en qualsevol aliment?<\/em><\/strong> <\/mark>Han d\u2019estar indicats a l\u2019etiqueta de <strong>l\u2019env\u00e0s de l\u2019aliment<\/strong>, sigui pel seu nom com\u00fa o pel denominat <strong>n\u00famero E<\/strong>, el qual \u00e9s el codi que fa \u00fas la Uni\u00f3 Europea. Per <strong>exemple<\/strong>, quan s&#8217;utilitza \u00e0cid ac\u00e8tic com a antioxidant, a l&#8217;etiquetatge es podr\u00e0 trobar<strong>: <em>antioxidant (\u00e0cid ac\u00e8tic)<\/em> o <em>antioxidant (E 260)<\/em><\/strong>(<a href=\"https:\/\/www.aesan.gob.es\/AECOSAN\/web\/seguridad_alimentaria\/subdetalle\/aditivos_alimentarios.htm\">AESAN, 2022<\/a>).<\/p>\n\n\n\n<p><strong><em><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">S\u00f3n revisables els additius?<\/mark><\/em><\/strong> La resposta \u00e9s <strong>s\u00ed<\/strong>, <strong>l\u2019Autoritat Europea de Seguretat Aliment\u00e0ria o Ag\u00e8ncia de Seguretat Aliment\u00e0ria (EFSA) <\/strong>\u00e9s l\u2019ag\u00e8ncia de la Uni\u00f3 Europea que <strong>vetlla per la seguretat aliment\u00e0ria en els pa\u00efsos de l\u2019Uni\u00f3<\/strong>.&nbsp; M\u00e9s en concret el Reglament (CE) n\u00fam. 1333\/2008 estableix que l\u2019article 32 la Comissi\u00f3 ha de crear un programa per tal de<strong> revaluar la seguretat dels additius alimentaris <\/strong>i cal que centri els seus esfor\u00e7os en aquells additius permesos abans del gener del 2009 (<a href=\"https:\/\/www.aesan.gob.es\/AECOSAN\/web\/seguridad_alimentaria\/subdetalle\/aditivos_alimentarios.htm\">AESAN, 2022<\/a>).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong><mark style=\"background-color:#7bdcb5\" class=\"has-inline-color\">LA GUIA DELS ADDITIUS<\/mark><\/strong><\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>Els additius alimentaris s\u00f3n tot un m\u00f3n, n\u2019hi ha molts i tenen caracter\u00edstiques molt peculiars que s\u00f3n expressades per la seva <strong>estructura molecular<\/strong>. Seguidament, <strong>et deixem unes claus per tal de saber quins additius duen els aliments que pretens comprar <\/strong>(<a href=\"https:\/\/www.ocu.org\/alimentacion\/seguridad-alimentaria\/informe\/aditivos-alimentos\">Organitzaci\u00f3 de Consumidors I Usuaris, 2020<\/a>). En color verd s\u2019indiquen els que el seu consum no \u00e9s tan perill\u00f3s i s\u00f3n necessaris per a mantenir l\u2019estat adequat de l\u2019aliment; mentre que en taronja corresponen a aquells que poden consumir-se en poques quantitats i, en vermell, els que cal evitar. <strong>Recorda, per\u00f2 que el millor aliment \u00e9s aquell fresc, no processat i que, per tant, no necessita pas additius per a conservar-se. A m\u00e9s, tot additiu t\u00e9 unes dosis m\u00e0ximes de consum i certs riscs associats.<\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"837\" src=\"https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2-1024x837.png\" alt=\"\" class=\"wp-image-5440\" srcset=\"https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2-1024x837.png 1024w, https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2-612x500.png 612w, https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2-768x628.png 768w, https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2-300x245.png 300w, https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2-500x409.png 500w, https:\/\/eat-life.fundesplai.org\/wp-content\/uploads\/2022\/08\/taula-additius-alimentacio-2.png 1312w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>A continuaci\u00f3 parlarem dels colorants, els quals s\u00f3n un component pol\u00e8mic en la ind\u00fastria aliment\u00e0ria.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong><mark style=\"background-color:#7bdcb5\" class=\"has-inline-color\">COLORANTS<\/mark><\/strong><\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>Com esment\u00e0vem anteriorment, els <strong>colorants<\/strong> s\u00f3n aquells que s&#8217;utilitzen per <strong>alterar o conferir colors als aliments<\/strong>, amb la finalitat <strong>d&#8217;augmentar el seu atractiu cap als consumidors<\/strong>. Aquestes subst\u00e0ncies han estat objecte de <strong>molts estudis diversos<\/strong>, un dels m\u00e9s controvertits fou el <em>The Southampton Study<\/em>. En ell, s\u2019hi diferenciaven dos grups d\u2019infants: uns que menjaven el seu dinar amb subst\u00e0ncies inn\u00f2cues (placebo) i, un altre, en qu\u00e8 s\u2019afegia un c\u00f2ctel de colorants alimentaris.<\/p>\n\n\n\n<p>Amb tot, s\u2019evidenci\u00e0 <strong>que els infants que consumiren els colorants desenvoluparen un trastorn de d\u00e8ficit d&#8217;atenci\u00f3 i hiperactivitat<\/strong>. Aquest estudi va ser <strong>molt contestat<\/strong> per les autoritats, com l\u2019EFSA <em>(European Food Safety Authority)<\/em> per\u00f2 els grups de defensa p\u00fablica i els mitjans de comunicaci\u00f3 van promoure una prohibici\u00f3 volunt\u00e0ria dels colors implicats. <strong>Un parell d&#8217;anys m\u00e9s tard, un estudi de seguiment sobre additius alimentaris en infants<\/strong> irlandesos assenyal\u00e0 que comparativament amb l&#8217;estudi de Southampton, els <strong>infants mai estarien exposats a dosis tan elevades d&#8217;additius<\/strong>, la qual cosa els colorants <strong>tornaven a ser readmesos.<\/strong><\/p>\n\n\n\n<p>La realitat \u00e9s que <strong>hi ha resultats contradictoris per a pr\u00e0cticament tots els colorants alimentaris i s\u00f3n molt preocupants<\/strong>, sobretot perqu\u00e8 <strong>pocs estudis han considerat les interaccions dels colorants amb la disminuci\u00f3 de la salut<\/strong>. Cal <strong>regularitzar la situaci\u00f3<\/strong> i <strong>informar b\u00e9 al col\u00b7lectiu consumidor<\/strong> sobre aquesta q\u00fcesti\u00f3 (<a href=\"https:\/\/ift-onlinelibrary-wiley-com.are.uab.cat\/doi\/10.1111\/1541-4337.12065\">Carocho et al, 2014<\/a>).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong><mark style=\"background-color:#7bdcb5\" class=\"has-inline-color\">ELS ADDITIUS NATURALS S\u00d3N MILLORS QUE ELS SINT\u00c8TICS?<\/mark><\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Actualment, la societat \u00e9s m\u00e9s conscient i s\u2019interessa pel que menja, i per aquest motiu els additius naturals han anat guanyant inter\u00e8s tant per part de les ind\u00fastries aliment\u00e0ries com dels consumidors. Alguns estudis demostren que els consumidors prefereixen els aliments preparats amb additius naturals m\u00e9s que amb additius qu\u00edmics, per motius de salut.<\/p>\n\n\n\n<p>Els additius naturals s\u00f3n for\u00e7a prometedors, per\u00f2 presenten alguns inconvenients i limitacions:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Un d\u2019ells per exemple \u00e9s la <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">dificultat per trobar fonts de les plantes o microorganismes<\/mark> que els produeixen<\/strong>, provocant en alguns casos una sobre recol\u00b7lecci\u00f3 que pot <strong>provocar danys als ecosistemes<\/strong> en qu\u00e8 s&#8217;insereixen.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Els beneficis dels additius naturals s\u00f3n infinits, la seva sinergia i pot\u00e8ncia \u00e9s un gran salt dels additius sint\u00e8tics que realitzen, a m\u00e9s que solen ser m\u00e9s segurs que els produ\u00efts sint\u00e8ticament, per\u00f2 la <strong>toxicitat <\/strong>sempre \u00e9s un detall que no s&#8217;ha de passar per alt. Sobre aquests additius <strong>s<mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">&#8216;han de fer estudis toxicol\u00f2gics, cancer\u00edgens i d&#8217;altres tipus de seguretat per tal de garantir-ne la seguretat i evitar ensurts.<\/mark><\/strong><\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Un altre problema s\u00f3n precisament aquests <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">efectes sin\u00e8rgics i la capacitat de dur a terme moltes funcions alhora<\/mark><\/strong> que tot i ser quelcom positiu, alhora fa que <strong>alguns no siguin compatibles amb altres additius o amb ingredients del mateix aliment, i, per tant, no es poden emprar.<\/strong><\/li><\/ul>\n\n\n\n<p><mark style=\"background-color:#fcb900\" class=\"has-inline-color\">Malgrat aquestes limitacions, els <strong>additius alimentaris naturals s\u00f3n el futur de la conservaci\u00f3<\/strong> dels aliments a causa dels <strong>beneficis i sinergies per a la salut, i guanyaran encara m\u00e9s inter\u00e8s en el futur<\/strong><\/mark> amb les <strong>limitacions que s&#8217;estan solucionant<\/strong>. Darrerament, <strong>s&#8217;ha fomentat el seu consum i hi ha nous productes<\/strong> que mostren <strong>etiquetes de \u00abtots els additius naturals\u00bb o \u00absense additius sint\u00e8tics\u00bb<\/strong> (<a href=\"https:\/\/www-sciencedirect-com.are.uab.cat\/science\/article\/pii\/S0924224415001508\">Carocho et al, 2015<\/a>).<\/p>\n","protected":false},"excerpt":{"rendered":"<p>PER QU\u00c8 ADDITIUS ALS ALIMENTS?
