{"id":5519,"date":"2022-08-04T14:06:28","date_gmt":"2022-08-04T12:06:28","guid":{"rendered":"https:\/\/eat-life.fundesplai.org\/restauracio-i-sostenibilitat-alimentaria\/"},"modified":"2023-02-27T18:34:17","modified_gmt":"2023-02-27T17:34:17","slug":"restauracion-y-sostenibilidad-alimentaria","status":"publish","type":"post","link":"https:\/\/eat-life.fundesplai.org\/es\/restauracion-y-sostenibilidad-alimentaria\/","title":{"rendered":"Restauraci\u00f3n y sostenibilidad alimentaria"},"content":{"rendered":"\n<p><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">De ben segur que en algun moment has sentit all\u00f2 de&#8230; <em>redueix pl\u00e0stics que contaminen molt!<\/em> o&#8230; <em>cal aprofitar tot el menjar comprat<\/em>, com tamb\u00e9&#8230; <em>\u00e9s vital comprar local i de temporada<\/em> i que&#8230; <em>si no t\u2019ho menges tot, demana que t\u2019ho posin per emportar.<\/em><\/mark><\/strong><\/p>\n\n<p>S\u00f3n pr\u00e0ctiques molt benvingudes que cada cop agafen m\u00e9s embranzida a la nostra societat. <strong><em>Per\u00f2 i la restauraci\u00f3?<\/em> Tenen un rol cabdal en el sistema alimentari actual en el nostre pa\u00eds, i ells cada cop tamb\u00e9 s\u2019adapten m\u00e9s a aquesta realitat conscient de la crisi aliment\u00e0ria i clim\u00e0tica.<\/strong> De fet,\u00a0 a l\u2019estat Espanyol \u00e9s el pa\u00eds om m\u00e9s bars i restaurants hi ha per persona de tot el m\u00f3n: un per cada 175 habitants, sumant en total 277.539 establiments gastron\u00f2mics, segons l\u2019Institut Nacional d\u2019Estad\u00edstica (INE). A m\u00e9s, la restauraci\u00f3 proporciona treball a 1,7 milions de persones i suposa el 4,7% del Producte Interior Brut (PIB).<\/p>\n\n<p>El <strong>col\u00b7lectiu culinari est\u00e0 doncs cridat a aquesta<\/strong> <strong>revoluci\u00f3 per a tenir una alimentaci\u00f3 sostenible<\/strong>, de fet tots ens trobem en el mateix equip, perqu\u00e8 <strong>cuidar el menjar vol dir cuidar el planeta<\/strong>. Per tal d\u2019assolir aquesta fita, aquest col\u00b7lectiu duen a terme pr\u00e0ctiques sostenibles, les quals s\u2019esmentaran m\u00e9s endavant per\u00f2, primer es fa imprescindible recordar la definici\u00f3 de <strong><em>desenvolupament sostenible<\/em><\/strong>, el qual \u00e9sla capacitat de satisfer les necessitats de la societat actual sense comprometre els recursos de les futures generacions.<\/p>\n\n<p>La consultoria ambiental <em>Te lo Sirvo Verde<\/em> en adici\u00f3 proposa el terme <strong><em>restaurant m\u00e9s sostenible. <\/em><\/strong>Aix\u00f2 ve a dir queun restaurant coneix la seva <strong>petjada ambiental<\/strong>, que t\u00e9 integrada una filosofia de reducci\u00f3 de l\u2019impacte ambiental dins de la seva gesti\u00f3 di\u00e0ria, i que anul\u00b7lament es planteja <strong>nous objectius per assolir<\/strong>. L\u2019entitat sense \u00e0nim de lucre Ecovidrio, a m\u00e9s hi afegeix que \u00e9s quelcom que va m\u00e9s enll\u00e0 de servir menjar saludable i ecol\u00f2gic, es tracta doncs de tenir una <strong>responsabilitat social, mediambiental i de valors<\/strong>: gestionant des dels residus, passant per l\u2019origen i temporalitat dels aliments fins a oferir pocs plats fixes als men\u00fas per exemple tot formant part d\u2019una comunitat.<\/p>\n\n<p>A continuaci\u00f3 s\u2019exposa un recull de <strong>deu<\/strong> <strong>pr\u00e0ctiques sostenibles<\/strong> a l\u2019\u00e0mbit de la<strong> restauraci\u00f3 proposades per <\/strong><em>Te lo Sirvo Verde<\/em> i per ladoctora Francesca Allievi de la Universitat de Ci\u00e8ncies<\/p>\n\n<ul class=\"wp-block-list\" type=\"1\"><li>Elaborar els plats amb <strong>aliments de temporada i de proximitat<\/strong>.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li>Emprar aliments d\u2019origen animal que apliquen sistemes de producci\u00f3 sostenible i un elevat <strong>benestar animal<\/strong>.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li>Prioritzar les <strong>produccions sostenibles<\/strong> per a tots els aliments perqu\u00e8 fomenta el benestar animal i a m\u00e9s, disminueix el risc de zoonosi, l\u2019\u00fas de medicaments i el consum de recursos naturals.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li><strong>Dissenyar i elaborar men\u00fas amb frescs <\/strong>(amb aliments no ultraprocessats). La idea \u00e9s tenir plats rics en fibres i amb una quantitat moderada de sucre, sal i greixos saturats. \u00c9s vital donar <strong>m\u00e9s protagonisme als vegetals<\/strong> i prioritzar els forns i panxes per a les coccions. D\u2019aquesta manera es redueixen les emissions de gas d\u2019efecte hivernacle.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li><strong>Residu zero: <\/strong>apostar per la reutilitzaci\u00f3 i procurar <strong>reduir i eliminar al m\u00e0xim possible tot el rebuig <\/strong>generat (embolcalls, menjar sobrant, estris de neteja, etc). En adici\u00f3 cal incrementar l\u2019\u00fas de p<strong>roductes sense petjada ecol\u00f2gica, <\/strong>per tant cal prescindir en mesura del possible de t\u00e8xtils no reutilitzables, detergents, qu\u00edmics, productes d\u2019un sol \u00fas i cel\u00b7luloses.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li>En aquesta l\u00ednia tamb\u00e9 escau<strong> potenciar l\u2019aprofitament alimentari: <\/strong>prevenci\u00f3 a l\u2019origen, vendre o donar els excedents i compostar la fracci\u00f3 org\u00e0nica.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li>Adoptar <strong>eines tecnol\u00f2giques<\/strong> per ajudar amb el mesurament i la reducci\u00f3 de l\u2019impacte de les diferents activitats del restaurant al medi ambient. Per exemple <em>software<\/em> per a monitoritzar el menjar desaprofitat o aplicacions per a mesurar l\u2019aigua emprada als plats.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li><strong>Contribuir a iniciatives<\/strong> que tinguin per objectiu crear un canvi positiu en el sistema alimentari. La cooperaci\u00f3 entre comunitats, clients, productors i autoritats colars \u00e9s imprescindible per assolir un canvi significatiu.<\/li><\/ul>\n<ul class=\"wp-block-list\"><li>Cal que tot el<strong> personal del restaurant sigui conscient <\/strong>de les bones pr\u00e0ctiques i els motius pels quals s\u2019impulsen.
