Pese a la diversidad de legumbres que se cultivan en casi todas sus comarcas, esta Comunidad Aut\u00f3noma importa grandes cantidades legumbres cada a\u00f1o. Parad\u00f3jico, \u00bfno es as\u00ed?<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">EL VIAJE DE LOS GARBZANZOS<\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>Seg\u00fan el informe <a href=\"https:\/\/www.tierra.org\/wp-content\/uploads\/2016\/01\/alimentos_kilometricos_2.pdf\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Alimentos Kilom\u00e9tricos<\/strong><\/a> la distancia media entre un productor de garbanzos y su consumidor es nada menos que <strong>7.500 km.<\/strong> <\/p>\n\n\n\n<p>El mismo informe afirma que ese viaje transoce\u00e1nico es completamente prescindible dado que los garbanzos <strong>ya se cultivaban en Catalu\u00f1a hace unos 40 a\u00f1os<\/strong>.<\/p>\n\n\n\n<p>Adem\u00e1s, el impacto de la producci\u00f3n de garbanzos en el tejido agr\u00edcola local de pa\u00edses como M\u00e9xico, uno de los principales proveedores de garbanzos de Espa\u00f1a, es devastador. <strong>Las condiciones laborales de las personas trabajadoras de los campos de garbanzo son muy precarias<\/strong>. Adem\u00e1s, el consumo habitual de legumbres <strong>reduce el colesterol, los triglic\u00e9ridos y algunos c\u00e1nceres<\/strong>, adem\u00e1s de mejorar la <strong>salud cardiovascular<\/strong>.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>En lo que hace a su valor nutricional, las legumbres contienen <strong>nutrientes beneficiosos<\/strong> como fibra, vitaminas, minerales, antioxidantes, prote\u00ednas y carbohidratos.  <\/p>\n\n\n\n<p>Si nos centramos en la <strong>cantidad y calidad de sus prote\u00ednas<\/strong>, las legumbres son un sustituto de la carne. Por ejemplo, 1000 g de lentejas secas contienen 24 g de prote\u00edna, mientras que 100 g de ternera o de pechuga de pollo proporcionan 20 g.<\/p>\n\n\n\n<p>Adem\u00e1s, las legumbres <strong>no contienen gluten<\/strong>, lo que las hace adecuadas para las personas cel\u00edacas. Debido a su elevado contenido de fibra, tambi\u00e9n son un gran alimento para las personas con diabetes y sobrepeso.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" s\u00f3lo son beneficiosas para la salud individual sino tambi\u00e9n para la <strong>salud planetaria<\/strong>: <\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Enriquecen la biodiversidad agr\u00edcola <\/strong>y la diversidad del paisaje.<\/li>\n\n\n\n<li><strong>Mejoran la fertilidad del suelo<\/strong> y la productividad agr\u00edcola sin necesidad de recurrir a fertilizantes sint\u00e9ticos, dado que se trata de plantas capaces de fijar nitr\u00f3geno. <\/li>\n\n\n\n<li><strong>Se necesita mucha menos agua para producir 1 kg de legumbres que 1 kg de prote\u00edna animal. <\/strong> Seg\u00fan la <a href=\"https:\/\/www.fao.org\/pulses-2016\/news\/news-detail\/es\/c\/345432\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>FAO<\/strong><\/a>, son necesarios alrededor de 13.000 l de agua para producir 1 kg de carne de ternera, mientras que se necesitan s\u00f3lo 1.250 l para producir 1 kg de lentejas.<\/li>\n\n\n\n<li>La producci\u00f3n de legumbres produce <strong>muy poca emisi\u00f3n de gases de efecto invernadero<\/strong> en comparaci\u00f3n con otros alimentos ricos en prote\u00edna.<\/li>\n<\/ol>\n\n\n\n<p>La <a href=\"https:\/\/canalsalut.gencat.cat\/ca\/vida-saludable\/alimentacio\/els_aliments\/llegums\/#bloc1\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Agencia de Salud P\u00fablica de Catalu\u00f1a <\/strong><\/a>recomienda <strong>comer legumbres 3-4 veces por semana<\/strong> y propone diversas recetas para hacerlo de un modo variado y saludable.<\/p>\n\n\n\n<p>Para aprender
